applying martial forms to fights

I had a question that I've been thinking about for some time. Here's one form of it, in simple and superficial terms:

It seems that when folks with a martial background fight (say, in a tournament), they primarily - if not exclusively - use kickboxing techniques. Why is that?

I'm somewhat familiar with gung-fu and taiji, so I can only speak for these styles. They are, from my understanding, fundamentally different than boxing/kickboxing. I don't necessarily want to go in a long philosophical discussion on 'what is gungfu', I simply wonder why I hardly ever see the forms applied in fights (of course, there's always the possibility I simply fail to see).
